Tomato and Corn Salad
Whether you buy these ingredients or grow them, this is a delicious, healthy addition to any meal.
Young sweet corn is small and the husks are still green. If you can't find this, using regular sweet corn is fine. This corn is NOT cooked, but added "raw". Awesome crunch. ALSO - you can chop ingredients smaller, add chopped green pepper and use this as fresh salsa.
Ingredients (serves two):
2 ripe beefsteak tomatoes (or 3 other ripe tomatoes), cut into bite-size pieces
4 fresh basil leaves, cut into thin strips
3 ears young sweet corn (if you can't find
1/2 red onion, chopped
Good olive oil
Heinz Salad Vinegar
Salt & pepper
Cut corn off of cob and put in large bowl. Add cut tomatoes, onion and fresh basil. Pour about 1/3 cup olive oil over vegetables and mix well. Add salad vinegar to taste - I add about 7-8 shakes. Add salt & pepper to taste....I add about 1 tsp each. Gently mix well. Let sit for about 1/2 hour, mix again and enjoy!!!!
