3 whole trout
Approx. 1/2 cup raw sugar
Rinse trout and pat dry. Rub trout with raw sugar. Place in a in a large ziploc bag and pour in enough soy sauce to coat fish. Marinade trout for at least half an hour and up to 1 hour.
Smoke the trout for 30 to 45 minutes - checking after 30 minutes. Whole trout takes a bit longer to smoke than fillets. Smoke to your preference. I prefer it "medium rare", so still soft. Some prefer the trout "well done", so firm to the touch.
Place smoked trout on a platter and serve with chopped red onion, capers, spicy mustard, chopped egg (optional) and French bread crackers. Enjoy!!
