Easy Sautéed Vegetables
Serves one as an entrée or 2 as a side.
3-4 cups of your favorite vegetables - cut or sliced into bite sized pieces. Mine are peppers, broccoli, cauliflower, onions and tomatoes.
Salt & pepper
1/2 tsp. Red pepper flakes, if desired
Heat olive oil to medium high (only about 2 TBS) in a large frying pan - non-stick is best. Once hot, add all cut veggies except tomatoes, if using, and toss in pan to coat with olive oil. Salt and pepper to taste. Continue to cook, tossing veggies every few minutes. Cook a total of about 6-8 minutes - or to desired "crispness". Add tomatoes and red pepper flakes, if using. Check veggies by piercing with fork. I like my veggies still pretty crispy - you are in contro! Filling as the main course - or a delicious side to just about any type of meat. Enjoy!!!
