Sautéed Tomatoes and Corn
I serve this with any meat entrée. Very tasty side dish that compliments most meats. Recipe serves 4.
5 ears fresh corn, cut off the cob
4 plum tomatoes, cut into bite-sized pieces
1/2 red or white onion, cut into bite-sized pieces
3 to 4 TBS butter
1 TBS salt & 1 TBS pepper
In a large non-stick frying pan, melt butter. Add chopped onion and sauté on medium heat until translucent - 3-5 minutes.
Add corn, salt & pepper and continue to sauté with onion for about 5 minutes, stirring regularly.
Add chopped tomatoes and sauté another 3 minutes. Taste and add additional salt & pepper to taste. Remove from heat and serve!
