Red Cabbage Cole Slaw
Susan's Red Cabbage Cole Slaw -
Serves about 10 as a side
This is a healthy, low fat slaw. Unlike the mayo-laden traditional recipes, I use a small amount of reduced-fat mayo and hype-up the flavor with a few other ingredients.
1 medium head red cabbage, thinly sliced and chopped
1 medium red onion, thinly sliced and chopped
2/3 cup reduced fat mayo
1 lemon, sliced in half
Salt & pepper
3 TBS caraway seeds (sets this slaw apart from the traditional slaw)
In a large bowl, combine cabbage and onion. Mix well. Add the mayo. Squeeze 1/2 lemon onto cabbage. Sprinkle the caraway seeds on cabbage and mix well. Salt & pepper to taste. Once all ingredients are incorporated, taste slaw. Add more lemon if desired. Refrigerate until an hour before serving. Mix again and taste. Add salt, pepper and more lemon juice if desired. This is an awesome topping for pulled pork and/or chicken sandwiches or a side for most meat entrees. And it's pretty:) Enjoy!!!!
