Potato Salad (low fat)
I love potatoes cooked just about any way. This is quick, easy and delicious. AND a nice, LOWFAT alternative to traditional potato salad.
I also love truffle oil - such wonderful flavor! You can now purchase truffle oil in most grocery stores and can use black or white truffle oil - and serve with truffle salt (AWESOME).
If you can't find truffle oil - or simply don't care for it, simply use Susan's Salad Dressing.
One small bag small white potatoes, cut in halves or quarters
1/2 to 3/4 cup truffle oil
4-5 green onions, chopped
Heinz salad vinegar. Shake to taste - I use 10-15 shakes
Salt & pepper
*serve with truffle salt if desired
Boil potatoes in a large pot until they can be pierced easily with a fork - about 10 minutes. Drain and return to pot.
Cool potatoes. IF YOU ARE NOT USING TRUFFLE OIL, simply use Susan's olive oil salad dressing and coat room temp potatoes. Add chopped green onion and mix well. Salt and pepper to taste.
IF YOU ARE USING TRUFFLE OIL, add 1/2 cup oil to potatoes and mix. Add salad vinegar, chopped onion and salt and pepper. Mix well. Taste and add more oil and vinegar to taste. Adjust seasonings as desired. Truffle salt can be purchased at most olive oil stores or cooking specialty stores
This can be served room temp, warm or chilled. If chilled, leave out for 15 minutes or so and mix before serving.
