Garbanzo Bean Salad
This garbanzo bean salad is perfect. Healthy, low-fat and really good. It is my go-to meal or side.
Simply rinse the garbanzo beans ( I use the large can, 29 oz.) and put in a large bowl. Add 3 chopped green onions (more or less to taste, greens included), 1/2 cup chopped banana peppers, 1/2 cup shredded fresh Parmesan cheese. Mix well and then add approximately 1/2 cup olive oil and about 1/8 cup Heinz Salad Vinegar.....my favorite salad vinegar.
Mix again and salt/pepper to taste. I like a lot of pepper. Best if this can sit for an hour or two so the favors can blend.....enjoy with no guilt!
