Serves about 8 as an appetizer.
Prepared guacamole for a graduation party - LOVE gauc. Here's my recipe. I like my guac chunky, but prepare to your liking! TIP: 2 ways to prevent your guac from browning. 1- add some fresh lemon or lime juice (great flavor too), 2- until you are ready to serve, put the avocado pits in the finished guac. This also prevent browning. Keep the pits for left-over guac. Remember - guac is HEALTHY fat and is a terrific substitute for mayo. on sandwiches.
12 ripe but still semi-firm avocados. cut in half or quarters and pitted
3 tomatoes, chopped (I also squeeze the seeds out of the tomatoes)
1 small, chopped red onion (if desired)
3 TBS garlic salt
The juice of 1 lemon or lime
Put avocado quarters in a large bowl and mash - I use a potato masher to do this. And I leave some chucks of avocado. Add chopped tomato's and onion (if using) and garlic salt. Squeeze in lemon or lime juice. Mix well. That's it! NOTE: sometimes I add chopped cilantro as well. Depends on the crowd, but that's another option.
