You will need an 8 inch round non-stick cake pan, buttered (or spray with Pam) and another 8 inch round to "weigh" the potatoes down (or another pan to place on top of potato layers. ALSO - you can make this a day ahead through Step 3.
5 red or yellow skin potatoes, thinly cut (with skin)
3 cloves garlic, minced or crushed (optional)
1/4 cup butter
Salt & Pepper (can use cayenne pepper if you want some heat)
Wax Paper or parchment paper
NOTE: if you want your potatoes very crispy, and to hold the wedge serving size shape, use fewer potatoes and only layer the potato slices twice - or 2 layers.
Step 1 - In a large skillet, melt butter. Once melted, add chopped garlic (if using) and brown over medium heat, stirring - about 2-3 minutes. Add potato slices and flip with a spatula to coat potatoes with butter and distribute garlic. Add salt and pepper to taste. Increase heat to medium-high and cook potatoes until light brown - continuing to flip occasionally. Should take about 15 minutes.
Step 2 - Remove from heat and cool. Once cool, layer potatoes in the non-stick cake pan. Remember, if you want potatoes really crispy, create 2 layers. Salt & pepper each layer. If you want the potatoes crispy on the top and bottom, but tender inside you can create 4 layers.
Step 3 - Once layered, put a sheet of wax paper over the potatoes and then place the second cake pan over the wax paper. fill the cake pan with something heavy to weigh it down - I used apples.
You can leave the potatoes weighed down over night if desired. If not, leave them for at least an hour.
When ready to bake, preheat the oven to 360. Once again, add salt and pepper to taste - bake potatoes for 35 minutes, or until they can be easily pierced with a knife. Raise the oven to high broil. Broil for several minutes until the potatoes are light to medium brown. Remove from oven.
Cover pan with a cookie sheet or wooden cutting board, and using oven mitts, flip potatoes over. "Knock on" the pan bottom to help potatoes drop (Pan will sound hollow when potatoes have dropped).
Put potato round back in oven on high broil (if you used a cutting board, it will be fine for a few minutes in the heat) and broil for several minutes until potatoes are light to medium brown.
Remove from oven. cut into wedges or pieces and serve!!!
