Broiled Chicken Breast with Asparagus
Had a great, light dinner last night. Broiled chicken breast and asparagus with grated cheese, onion and lemon. Wonderful and easy side...and remember, if you don't like onions, leave them out.
Serves 2-4 as a side
1 bunch asparagus
1 lemon, cut in half
1/2 white onion, cut into thin slices
Salt & pepper
1/2 cup grated fresh parm or other favorite cheese
Wash asparagus and break thicker ends off each stalk. Lightly coat a non-stick skillet (that can also go into the oven) with olive oil and heat. Add asparagus and toss to combine. Cook over medium-high heat, stirring for about 3 minutes.
Heat oven to high broil. While heating broiler, put onions on top of asparagus. Put skillet under broiler. Cook until onion and asparagus are lightly brown...a few minutes. Pull out and sprinkle with grated cheese. Return to oven and broil until cheese is melted and bubbly - just another minute or two. Pull out of oven and squeeze lemon over mixture. Season to taste with salt and pepper. Place skillet on a cutting board and place in the middle of the table. Everyone can serve themselves. Enjoy!!!
