This is a refreshing, satisfying - delicious summer lunch or dinner. Great way to use your summer garden veggies. Remember the potatoes should be room temp or chilled. Also - keep in mind that ingredients can be added or deleted - to suit whatever mood you're in or whatever looks great that particular day.
Summer Salad - serves 2-4
6-8 tomatoes, cut into bite-sized pieces
3 cucumbers, cut into 1 inch pieces
3 ears of corn, kernels cut off (uncooked)
1/4 cup chopped basil
10-15 small, white/tan potatoes, boiled until tender, chilled or room temperature
3 green onions, chopped
1 small red onion, chopped
CGD - about 1/2 to 2/3 cup
OTHER OPTIONAL INGREDIENTS
Sliced green or red peppers
Crumbled Feta Cheese
Slice potatoes into quarters or smaller. Combine all ingredients. Let rest for about an hour, mixing several times during the hour. Serve and enjoy!!!!
