The secret to this dish is...BUTTA. There is nothing tastier than butter - and it actually is healthier than margarine. While margarine has less saturated fat than butter, it contains a high level of trans fats....hello heart disease! Stick with butter and just keep it in moderation. Now...this dish....
Serves 4 Ingredients: 5 ears corn 4 roma or beefsteak tomatoes, chopped (more if desired) 1 onion, chopped 2 tsp salt 2 tsp pepper 4 TBS butter Cut corn off each cobb and set aside. Melt butter in a large frying pan over medium high heat. Add chopped onion and sauté for 2-3 minutes. Add corn and continue cooking, mixing well, another 2-3 minutes.. Add salt and pepper. Stir to combine. Add chopped tomato and continue stirring. Cook another few minutes. Remove from heat and enjoy! NOTE: if you want the tomatoes firm, do not over cook. If you want them mushy, cook until desired texture.
