My Crazy Mixed Up Salad was served at my nieces bridal shower. Delicious! And dressed with CGD. Recipe below. Give it a try - you'll love it!!!
Crazy Mixed Up Salad - remember, if there are ingredients in the salad you do not like, leave them out!
1 LB small red or light brown potatoes
5 hard boiled eggs, cut into wedges
1 small jar capers
30-40 pitted kalamata olives, sliced in half
4 medium tomatoes, sliced into wedges
1 large cucumber, thinly sliced
1 red onion, thinly sliced
1 cup portabella mushrooms, thinly sliced
1 cup crumbled feta cheese
2 bunches (about 5 cups) small arugula
1 to 2LBS large shrimp, peeled, de-veined and marinaded with CGD for about an hour
CGD - Crazy Good Dressing
Cut potatoes in half or quarters (depending on size) and boil until tender . Drain and cool.
Heat large non-stick frying pan until hot. Once hot, add marinaded shrimp to pan (and add the marinade to pan as well) and cook about 1 minute. Flip shrimp and cook other side. Remove and set aside. NOTE: do not crowd shrimp or they will steam and not cook.
In a large bowl, layer potatoes, tomatoes, cucumber, arugula, onions, mushrooms, olives, 1/2 capers. Top with olives. Arrange cooked shrimp in a circle on top of veggies. Then arrange wedges of eggs in a circle on top and sprinkle feta crumbles and remaining capers over eggs.
Just before serving, dress with CGD (or an olive oil vinegar mixture if not using CGD) and mix well. Serve and enjoy!!!!
