This salad is so good and so easy. A definite crowd pleaser. Burrata is a wonderful soft cheese. It is not fresh Mozzarella, but Burrata is made with a Mozzarella outer "pouch" and filled with a soft, stringy curd and fresh cream. It is truly delicious. Try this salad for your Fourth of July celebration!
1 container burrata cheese
1 or 2 containers baby arugula (depending on how many your are feeding)
4 tomatoes (your favorite kind, but if using plum or roma tomatoes, use 6), cut into bite-sized pieces
Optional additions: pitted kalamata olives; chopped green onions; avocado
Wash tomatoes and arugula. Toss arugula lightly with CGD. Spread arugula on a large platter. Drain Burrata. Rip into pieces and top Arugula. Top Arugula and Burrata with tomatoes. Vigorously shake CGD and drizzle over salad. Top with additional ingredients if desired. Serve and enjoy!!!
