This is one of my favorite summer dinners. I posted this last summer, but it is worth a repeat! While I love grilled pizza, this is so good - and perfect for a guilt-free "treat". Give it a try - and as always, feel free to customize your cabbage pizza toppings. NOTE: the cabbage will still be nice and crunchy after grilling. Wonderful, crisp flavor and texture. 1 red cabbage
Crazy Good Dressing (CGD)
Thinly Sliced tomatoes
Salt & pepper
Slice an approximately 3/4 inch piece of cabbage horizontally from the center of a red (or green, if preferred) cabbage so you have a circular slice, and marinade in the CGD for at least 2 hours prior to grilling.
Thinly slice one tomato and set aside. Grill the cabbage over a medium-high heat, basting with CGD, for about 5 minutes. Flip cabbage over and bast again (if the cabbage doesn't have grill marks, flip back and grill another few minutes) with CGD for several minutes. Top cabbage with tomatoes and cheese. Salt & pepper to taste and sprinkle with granulated garlic , if desired. Cover grill and melt cheese. About 2-3 minutes. Remove from grill once cheese is nice and bubbly. Top with chives. Serve with sharp knife and fork and enjoy!!!!
