Potatoes may be my favorite food. And they've gotten a bad rap. Potatoes have virtually no calories but lots of fiber and potassium. Another great fact to know: cool potatoes actually can help aid in weight loss. Cool potatoes have "resistant starch". When potatoes are cooked and cooled, the resistant starch forms "tight crystals" which then result in slow absorption(livestrong.com). This means that the potatoes basically just go right through you - so enjoy your potatoes!
GREEN ONION/OLIVE OIL POTATO SALAD
4-5 LBS small white or red potatoes
1 cup (or more) Crazy Good Dressing (CGD), or high quality olive oil
6-8 chopped green onions
Salad Vinegar (if not using CGD)
Salt & pepper
Wash potatoes well and cut into bite-sized pieces. Put potatoes in a large pot of water and boil potatoes until they can be pierced by a fork, about 10 minutes. Drain, rinse and put potatoes in a large bowl. Cover with cold water for about 30 minutes, until potatoes are room temp.
Drain and put in a serving bowl. Add green onions and CGD (or oil). Mix carefully. If using oil, not CGD, add about 10/12 shakes of salad vinegar and mix. Let potatoes rest for about 20 minutes. Taste and add more vinegar (or CGD) if desired. Salt & pepper to taste and enjoy with no guilt! FYI - Crazy Good Dressing site up soon!
