This is a super easy, delicious meal that is easy to make and highlights summer produce. My Crazy Good Dressing - CGD - is what I use to dress this salad - and it is the best. You can order some CGD from me, or use your favorite salad dressing.
1 LB small red potatoes, cut, boiled until they can be pierced with a fork - skins on
6 hard boiled eggs, cut into quarters
1 red onion, thinly sliced
30 pitted kalamata olives
4-5 tomatoes, cut into bite-sized pieces
1 cup sliced portabella mushrooms, sliced
2 bunches arugula, stems cut and ripped into bite-sized pieces
2 Cucumbers, thinly sliced
1 cup - or more to taste- feta cheese, crumbled
1 LB boiled or grilled shrimp, room temp
1 small jar capers, drained
CGD or dressing or choice
Layer each ingredient - I like the top layers to be tomatoes, then shrimp, feta and finally quartered eggs. Pour on CGD and mix.....but first let everyone look at how pretty it is - then serve!
