Corn & Tomatoes will soon be Abundant - Here's a delicious (and easy) way to take full advantage of the wonderful flavors.
Sauteed Corn, Tomatoes & Onions
This dish is so flavorful and easy to prepare, it may become a regular in your house this summer.
6 ears corn
1 medium white onion, chopped
2 beefsteak tomatoes, cut into bite-sized pieces. Or 4 plum tomatoes cut into bite-sized pieces
About 6 TBSP butter (or more to taste)
Salt & pepper
Shuck the corn & cut the kernels from the cob with a sharp knife. Hold cob upright on a butcher block and cut from top to bottom. Turn & cut until cob is empty.
Melt butter in a large, non-stick frying pan. Once melted, add chopped onion and saute until somewhat soft. About 3-5 minutes. Add corn and stir. Cook for about 5 minutes, stirring constantly.. Add chopped tomatoes, mix well. Cook for about 2 minutes, until tomatoes are heated through. Add slat & pepper to taste - I usually add a tsp salt and 2 tsps pepper. Mix well, remove from heat and enjoy!!!
