SMOKED SOME BEAUTIFUL SALMON FOR A DINNER PARTY. SMOKING SALMON TURNS INEXPENSIVE CUTS INTO DELECTABLE NIBBLES FOR ALL.
Smoking salmon is easy - if you have a smoker. Great investment - this is a smoker/grill combination, but small smokers are inexpensive and worth it. Get 1/2 a salmon (they are cut down the middle. No worries - there's no head:) We rub the salmon in molasses and sprinkle with pepper & garlic powder and smoke for about 20 minutes (don't over-smoke or it will be tough and dry). You can rub the salmon with anything you like -spices, oil, whatever! Serve the salmon with spicy mustard or cream cheese, chopped red onion, chopped hard boiled egg, capers and crackers. It's wonderful!
Look at this gorgeous pumpkin! Just one of many different types of pumpkins in our gardens. Making pumpkin soup this weekend. One of many terrific recipes in Cooking and Entertaining with Ease.
I made this Peach Salsa last night and topped my warm black beans. It was enough to make me swoon......try it.
Serves 2, but really one because I ate it all.
3 peaches, chopped (You can skin or leave it on. Up to you)
1/3 cup chopped jalapenos (fresh or jarred - if fresh, seed)
1/3 cup chopped white onion
1/3 cup fresh cilantro, chopped to whatever size you want
Juice and zest of one Lemon or Lime
1 avocado, chopped
Salt & pepper to taste
Dash of CGD - Crazy Good Dressing
Mix all and use on pretty much anything. I loved it on the warm black beans with some bite-sized, left-over steak, but would be fabulous on chicken, fish. Or simply serve as an app with chips. ALSO - if you don't like peaches, use strawberries. Fantastic!
I have a wonderful pumpkin soup recipe in Cooking and Entertaining with Ease, along with other fabulous fall recipes. Log onto www.puttingontheritts.com and check out recipes and cookbook information.
This is the best coleslaw I've ever made. VERY little mayo - and a few ingredients that will surprise you.
RED CABBAGE COLE SLAW

3 lemons, juiced
1/2-3/4 cup light mayo (to taste)
1 large red onion, thinly sliced
1 1/2 tsp salt
2 tsp pepper
3 TB caraway seeds
Mix all but lemon juice and caraway seeds. Add 1/2 cup lemon juice and caraway seeds. Mix well. Taste. Add additional lemon juice if desired. Chill about an hour or longer.Top burgers, chicken sandwiches, subs with cole slaw. Or serve along side ribs, steak, chicken or fish. Versatile and delicious!
