This cheesecake is different. A delicious, dense creation. Not as sweet as traditional cheesecake. Shortbread crust. Dense and creamy. Better. Just one of the terrific recipes in Cooking and Entertaining with Ease. Check out our site. www.puttingontheritts.com
The secret to this dish is...BUTTA. There is nothing tastier than butter - and it actually is healthier than margarine. While margarine has less saturated fat than butter, it contains a high level of trans fats....hello heart disease! Stick with butter and just keep it in moderation. Now...this dish....
5 ears corn
4 roma or beefsteak tomatoes, chopped (more if desired)
1 onion, chopped
2 tsp salt
2 tsp pepper
4 TBS butter
Cut corn off each cobb and set aside. Melt butter in a large frying pan over medium high heat. Add chopped onion and sauté for 2-3 minutes. Add corn and continue cooking, mixing well, another 2-3 minutes.. Add salt and pepper. Stir to combine. Add chopped tomato and continue stirring. Cook another few minutes. Remove from heat and enjoy! NOTE: if you want the tomatoes firm, do not over cook. If you want them mushy, cook until desired texture.
Both the flower gardens and the vegetable gardens are looking pretty good so far! Sunflowers are just peaking out. Follow the progress!

Grilling season has begun.....try grilling ALL your veggies. The taste is amazing! Tomatoes, cabbage, corn peppers, mushrooms - you name it - grilling enhances the flavor. If you marinade vegetables in Crazy Good Dressing, even better. Or simply brush while grilling, with CGD or olive oil. A healthy and delicious meal. Time to get your grill on!!
