This is a real treat. And a great dish to serve company. This pasta & bread is really all you need!
Tomato, Basil and Brie Pasta
1 LB linguine pasta
6 plum tomatoes
1 cup basil
Juice of 2 lemons
2 TBS lemon zest
1/2 cup extra virgin olive oil
Salt & pepper
1 1/2 cups chopped Brie cheese, rind removed
In a large bowl, combine oil, lemon, garlic powder (to taste) and whisk until well blended. Cook pasta according to directions. While pasta is cooking, cut tomatoes into bite sized pieces & basil into thin strips.

This is just one of the many quick, easy recipes from my cookbook, Cooking and Entertaining with Ease. I love blueberries, so this is perfect for those who also love blueberries. AND it's perfect for those who prefer other fruits because the blueberries can be swapped out for any other fruit! Apples, peaches, blackberries....anything. Recipe stays exactly the same. 1 3/4 cup all purpose flour
1 cup cold butter, cut into 1/2 inch pieces
1 TB sugar
1/3 cup cold water
3 cups bluberries
1/2 cup sugar
1 TB cornstarch
Zest & juice of one lemon
1 egg, beaten
2 TB sugar
Preheat oven to 350 degrees. Put a sheet of parchment paper on a cookie sheet and set aside. Place flour, butter & sugar in a food processor and pulse just to combine. Slowly add water while continuing to pulse. Dough will for a ball. Remove from processor, wrap in plastic & refrigerate for at least 1/2 hour & up to 4 days.
Combine sugar, cornstarch, lemon & lemon zest in a bowl. Mix & pour over blueberries. Toss to combine.
When dough is chilled, sprinkle four on a clean surface. Place dough on floured surface & let rest for 30/40 minutes. Roll dough into a 13 to 14 inch round. Transfer to parchment covered sheet.
Spoon blueberry filling onto dough leaving 2 inches over dough uncovered. Fold dough over blueberries, pleating to form a flat cover leaving the center blueberries exposed.
Brush dough with beaten egg and sprinkle with 2 TBS sugar. Bake on center rack for 45 to 50 minutes until crust is golden brown. Let cool & serve alone or with vanilla bean ice cream. Enjoy and HAPPY EASTER!
FRIDAY'S CGD RECIPE. CGD sauteed green beans & red onions, topped with feta cheese and a poached egg. Delicious!
CGD Recipe of the Day from a CGD Lover. Again, super easy-only 3 ingredients- and so good! CGD POTATO SALAD. A must try!
Serves about 8 as a side dish
5 pounds small white or red potatoes
1 cup (or more to taste) Original CGD Seasoned Olive Oil
6-8 chopped green onions
Wash potatoes & cut into bite-sized pieces. Put potatoes in a large pot and cover with water. Bring to a boil over high heat. Boil until a fork can pierce potatoes, approximately 10 minutes. Remove from heat, drain and rinse with cold water. Place potatoes back in pot and cover with cold water. Let potatoes rest in water for 30 minutes.
Drain potatoes and place them in a large serving bowl. Add chopped green onion and CGD. Gently mix well to thoroughly combine ingredients. Let potato salad rest for about 30 minutes. Taste and decide if the salad needs more CGD. Add accordingly. Serve at room temp - this salad does not need to be refrigeration - and ENJOY!! LOVE this salad!
