A fellow Farmers Market vendor gave me this recipe. John Swanson, "The Honey Guy" as I call him, bought some of my CGD and used it in this amazing recipe and to my great joy, shared his creation with me. This is a MUST TRY. Each cabbage slice serves one
One head red cabbage
1 large heirloom (or other type) tomato, thinly sliced
Crazy Good Dressing (CGD)
Fresh, shredded parmesan cheese
Salt & pepper
NOTE: begin 2 hours prior to cooking
Slice cabbage head crosswise, in 3/4 inch slices. Cut as many as you want to cook. Each cabbage head will produce 3-5 slices, depending on size. Pour CGD over sliced cabbage. Salt and pepper cabbage as well. Marinade cabbage in CGD for 1-3 hours, flipping once or twice during process.
Get grill going. Once grill is ready, using LARGE spatula's (cabbage will be a bit hard to handle, but the large spatula will help), place marinated cabbage on grill. Grill cabbage for about 5 minutes and flip.
Top flipped cabbage with sliced tomatoes and cheese of choice. Grill for another 5 minutes, or until cheese is melted. Remove from grill, plate and using a sharp knife and fork, cut and enjoy!
