This is the best coleslaw I've ever made. VERY little mayo - and a few ingredients that will surprise you.
RED CABBAGE COLE SLAW
1 head red cabbage, thinly sliced and cut into bite-sized pieces
3 lemons, juiced
1/2-3/4 cup light mayo (to taste)
1 large red onion, thinly sliced
1 1/2 tsp salt
2 tsp pepper
3 TB caraway seeds
Mix all but lemon juice and caraway seeds. Add 1/2 cup lemon juice and caraway seeds. Mix well. Taste. Add additional lemon juice if desired. Chill about an hour or longer.Top burgers, chicken sandwiches, subs with cole slaw. Or serve along side ribs, steak, chicken or fish. Versatile and delicious!
