I made this Peach Salsa last night and topped my warm black beans. It was enough to make me swoon......try it.
Serves 2, but really one because I ate it all.
3 peaches, chopped (You can skin or leave it on. Up to you)
1/3 cup chopped jalapenos (fresh or jarred - if fresh, seed)
1/3 cup chopped white onion
1/3 cup fresh cilantro, chopped to whatever size you want
Juice and zest of one Lemon or Lime
1 avocado, chopped
Salt & pepper to taste
Dash of CGD - Crazy Good Dressing
Mix all and use on pretty much anything. I loved it on the warm black beans with some bite-sized, left-over steak, but would be fabulous on chicken, fish. Or simply serve as an app with chips. ALSO - if you don't like peaches, use strawberries. Fantastic!
