Baked Bruschetta with Feta/Cream Cheese Spread
8 ounces reduced-fat cream cheese, room temp
8 ounces feta cheese
8 red and/or green tomatoes, cut into small wedges
2 crusty baguettes, cut length-wise.
Preheat oven to 400.
Combine feta and cream cheese. Mix until well incorporated and smooth. Set aside.
Place tomato wedges on a non-stick cookie sheet and lightly sprinkle with olive oil, garlic salt and pepper. Put tomatoes in oven and cook until beginning to brown and are soft, about 15-20 minutes. Remove from oven and set aside.
Butter both sides of cut baguettes. Cut each length of bread in half.
In a cast iron grill pan, or on a grill, place bread cut side down and cook until bread has dark brown grill marks. Flip and grill other side for a minute or two. Remove from heat. Serve bread on a large platter alongside cheese mixture and baked tomatoes. Guests can "rip" bread (or you can cut into smaller pieces), spread cheese on bread and top with tomatoes. Delicious!
