Menus & Ideas: APPETIZERS
Putting on the Ritts has many favorite appetizers and is always happy to create a new one just for your event. All are available individually to serve as many as you require. If you don't see what you're looking for, simply please ask for it!
Anti-pasta platter - Kalamata Olives; assorted cheeses; peppercini’s; mini pickles; hard salami; marinated onions and mushrooms.
Crack Dip – Caramelized onion spread/dip. Reduced-fat cream cheese and caramelized onions star in this very addictive dish that can be accompanied by chips, vegetables or crackers. Also excellent on toasted bagels.
Mushroom/Brie Crustini – Mushrooms, onions and spices sautéed in olive oil and butter, then finished with red wine. Sautéed mixture is piled on a toasted slice of French bread, topped withbrie cheese then broiled.
Scallops with Susan’s Signature Tartare Sauce – Panko-crusted pan seared jumbo scallops. Served with my tartare sauce. Wonderful “finger” food.
Puff Pastry Mustard/Cheese Sticks – Baked pastry breadsticks with spicy mustard and parmesan cheese filling.
French Roasted Vegetables – A wonderful array of vegetables; red potatoes, tomatoes, onions, yellow and red peppers, zucchini and squash roasted in high quality olive oil and spices until soft and fragrant. Served with a ranch-type dipping sauce.
Truffle Deviled Eggs – Traditional deviled eggs with a very tasty twist – the addition of black truffle oil in the yolk mix and served with black truffle salt.
Artichoke/Crab Dip – This traditional dip is made with the liberal addition of chopped jalapenos. Very, very good – with a nice “bite” to it as well. Served with crisp French bread crackers.
Mini Twice-Baked Potatoes – Wonderful small potato shells filled with a potato, cheese and spice mixture.
Apple/Cheese Crustini – Delicious sweet apples thinly sliced and paired with provolone cheese and crusty bread. Broiled and sprinkled with salt.
Egg Salad Spread – Requested often – this egg salad spread quickly disappears. Hard boiled eggs, cream cheese, green onions and secret spices. Served with crackers.
Mushroom/Brie Martini - Deconstructed Mushroom/Brie crustini.. Mushrooms and cheese served in a mini-martini glass with French bread crackers.
Pate - A silky smooth chicken liver pate made with a hint of Brandy.
